House Rub BBQ Pork Belly Bites

(Use controlled portion as pork belly is high fat)
Ingredients

Pork belly (diced) – 1.5 kg

Smoky spice rub – 30 g
-
Rapeseed oil – 20 g
-
Apple cider vinegar – 20 g
Method
-
Toss pork with oil and rub.
-
Roast 180°C for 45–50 minutes until caramelised.

Finish with vinegar
Portion
Approx 120–130 g cooked per portion
Serve with:

House Rub Pulled Chicken Taco Filling
10 portions (20 tacos)
Ingredients
-
Boneless skinless chicken thighs – 1.8 kg
-
Onion (sliced) – 250 g
-
Garlic – 20 g
-
Smoky spice rub – 40 g
-
Rapeseed oil – 30 g
-
Chicken stock – 300 g
-
Tomato puree – 40 g
-
Apple cider vinegar – 20 g
Method
-
Toss chicken with oil and spice rub.
-
Place in gastronorm tray with onions and garlic.
-
Add stock, puree and vinegar.
-
Cover and cook 160°C for 90 minutes.
-
Shred chicken and mix with cooking juices.
Portion
Approx 150 g filling per serving (2 tacos)

House Rub Sweet Potato Wedges

Ingredients

Sweet potatoes – 2.5 kg
-
Rapeseed oil – 60 g
-
Smoky sweet spice rub – 35 g
-
Lime juice – 30 g
-
Fresh coriander (optional) – 15 g
-
Method
-
Wash and cut sweet potatoes into wedges.

Toss with oil and spice rub.
-
Roast at 200°C for 30–35 minutes, turning halfway.
-
Finish with lime juice and chopped coriander.

Approx 250 g cooked per portion

Ingredients

Corn on the cob – 10 whole cobs
-
Unsalted butter – 60 g
-
Smoky spice rub – 18 g
-
Lime wedges – optional
Method
-
Brush corn with melted butter.
-
Sprinkle lightly with rub.
-
Roast or grill 200°C for 15 minutes.
