Pineapple and passion fruit mess
Ingredients

500ml Double cream whipped to soft peaks

100g icing sugar

Vanilla essence

1 fresh pineapple diced

500g meringue roughly crushed

2 passion fruit
Makes 10
Method
Fold all Ingredients together except the passion fruit. Garnish with the passion fruit pulp
Oat Crunch cookies
Ingredients

Butter 100g
-
Soft Brown Sugar 55g

Syrup 35g
-
Oats 55g

Flour 80g
-
Baking powder 1 tspn

Sunflower Seeds 25g

Pumpkin Seeds 25g

Sultanas 50g
Makes 10
Method
·Cream butter and sugar until pale.
·Add the golden syrup and beat to combine
·Stir in oats, flour and baking powder
·Add sunflower seeds, pumpkin seeds and Sultanas
·Either use a small scoop size 36 or roll into balls
·Place on a lined tray and bake 11 minutes 160c
·Dip in chocolate and sprinkle topper on top
Chocolate Orange Fool
Ingredients

240ml cold custard
-
480ml cream
-
90g caster sugar
-
120g marmalade
-
1 oranges
-
60g coco powder

Method
·
Whip your cream &castor sugar till stiff add custard plus half a tub of blitzed marmalade.
Lightly combine. whisk coco with water until smooth but thick. Then Whisk into cream mix till smooth fill pots.
Dry out orange for garnish.
